No matter how big or small my business ends up, as long as I make my mark on the hospitality industry, I'll be happy!

I grew up on a farm in Ireland where I became a butcher. When I was 20 years old, I went to London to learn about the butchery trade. Then, I moved into cooking, working with a friend in my days off from the butchers. After a few years working as a cook in London, I took an opportunity to work in Belgium for some time and, when I went back to London, I worked at The Chiltern Firehouse, one of the city’s top restaurants.
I'm very lucky to have travelled all over the world with my job: Sydney, Singapore, Copenhagen, Belgium and Peru, working at Astrid and Gaston’s.

Since the beginning of 2015 I have been developing my own project and now, after a year of hard graft and loads of mishaps, I'm nearly there.

I had the vision to create a hospitality group that is food led. A place where people can enjoy coming to work, be creative, be given opportunities and, ultimately, receive a pension.
I'm about to open my first restaurant and it's always been my dream at some point to become self-employed and make my mark on the industry that I love. Hopefully this will be the start of my journey to follow even more dreams.
